I'm getting several profile feedback from different business schools ( example : IESE HEC Oxford) and all of them encourage me to apply for the MBA even if my gmat score is just 610.
Do you think that it is worth proceed with the application even if the gmat is low?

I think so. If there's something else in your profile that makes you a good candidate, then do so. As a test, ask them to put you in touch with an alumnus, perhaps someone with a background like yours. The alum will give you and them a useful recommendation, positive or negative. I did this is one top school that I thought I liked, and the alum have be a clear recommendation to not apply. That saved everyone's time.
