Looking for a European school and I'm not sure my GMAT will be up to snuff with some higher tiered schools. Which is the better school and better MBA program, EDHEC or Hult? Hults now offering a full scholarship to for a Master in Finance after the MBA as well.

EDHEC is ranked in FT. Hult fell out of FT in 2015 i think. Edhec will also offer you scholarship based on GMAT. They did offer me. (Though I did not join)
EDHEC has 613 average GMAT.

Do you have any goals beyond being in Europe? Pisa is beautiful, and cheap.
EDHEC is obviously a world class school for finance, and the finance track there makes excellent use of the London campus where their finance PhD is also based. Hult has none of EDHEC's standing in European finance. The idea of a school doing a By One Get One Free offer is sad.

"Reasons for the mba; grow my ability as a leader in business, hone analytical and technical skills (accounting, valuations, marketing, entrepreneurship), grow as an individual in a unique setting outside of Canada, and lastly to grow my network of like minded individuals outside of my home country" - from a previous post. Europe isn't only criteria but thats where I'd like to be.
I was unaware the EDHEC was such a good Finance program - good to know, thanks.
From a money perspective, costs will be covered by my company and they're open to any school regardless of costs- I know sounds snobbish.

Look at the FT masters in finance ranking. Those schools generally have good MBA support for finance too. If the company is paying go somewhere way better than Hult.
