Looking into the future, are there any projections as to which fields (within MBAs) will probably have the highest employment rates and demand? I.e., considering the way the job market is heading, automatization, etc., is any field expected to grow considerably within the next few years? Are there others expected to dwindle? Thank you.

I think the big difference is between schools, not specialisations. High quality schools get great outcomes. Generally finance is in high demand because, unlike consulting, there are many finance roles and it's easy to make an impact, especially in corporate finance.
